Your Zone 2 rides might be too hard. Are you chasing an average power, at the top end of zone 2? Then you may be riding in Zone 2 too hard. Watch your heart rate and most importantly perceived exertion. Any minute over zone 2 takes twice as long, if not more, to get back to proper zone 2 training. Remember heart rate and perceived exertion will come up over the course of a 3 to 4hr ride so the first half of long zone rides or even short zone 2 rides may feel easy. That is ok! Keep the easier days easy and harder days harder. Don’t chase watts on zone 2 days, chase watts on interval days!
